Bayed Up BBQ Beans

Ingredients:
1/2 lb Bacon
1 lg Onion
1 Tbsp minced Garlic
1 tsp Thyme
1 lb Navy beans (rinsed and picked)
1 cup Brewed Coffee
1/2 cup of your favorite BBQ sauce
1 Tbsp Creole mustard
1 Tbsp molasses
1 tsp hot sauce
1/2 cup Bayed Up BBQ Rub
6-7 cups water

Directions:
Heat oven to 300F

In a heavy cast iron dutch oven, cook the bacon until crispy. Add the onion and cook until soft and lightly caramelized. Add the garlic and thyme and cook for 1 minute. Add Beans, coffee, BBQ sauce, hot sauce, molasses, Bayed Up BBQ Rub, and water. Bring to a boil. Cover the pot and place in oven for 2 hours, undisturbed. Remove from the oven, stir well, (adjust water if necessary) replace lid and cook till beans are tender. (About an hour)

When the beans are tender, remove lid and continue to cook until the cooking liquid has reduced to a thick, sauce like consistency and the beans are thick and flavorful. Adjust seasoning if desired and serve.
